- Walnuts1/4 cup, chopped

- Red Wine Vinegar1 tablespoon

- Fresh Parsley2 tablespoons, chopped

Roast the eggplants and bell peppers until charred and soft. Let them steam in a covered bowl after roasting to ease peeling.

Peel the eggplants and peppers, remove seeds from peppers, and discard stems. Finely chop the flesh.

Mince the garlic cloves. Roughly chop the walnuts.

In a bowl, combine the chopped vegetables, minced garlic, chopped walnuts, olive oil, red wine vinegar, and smoked paprika.
