Prepare the croutons: Toss baguette cubes with 2 tbsp olive oil, salt, and pepper. Bake at 375°F (190°C) for 10-15 minutes until golden and crisp.

Grill or pan-sear chicken breasts until cooked through. Let rest, then slice.

Make the dressing: In a bowl, whisk together minced garlic, lemon juice, Worcestershire sauce, Dijon mustard, egg yolk, and anchovy fillets (mashed into a paste). Gradually whisk in the remaining olive oil until emulsified. Stir in grated Parmesan cheese. Season with salt and pepper.

Wash and chop romaine lettuce. In a large bowl, toss the lettuce with the dressing until evenly coated.

Add the sliced grilled chicken and croutons to the salad. Toss gently.
