- Feta Cheese4 oz, crumbled
- Kalamata Olives1/4 cup, pitted and halved
- Capers1 tbsp, rinsed
- Extra Virgin Olive Oil3 tbsp
- Dried Oregano1 tsp
- Saltto taste
- Black Pepperto taste

Lightly dampen the barley rusks with water, just enough to soften them slightly.

Grate the ripe tomatoes into a bowl. Stir in the olive oil, oregano, salt, and pepper.
