- Feta cheese150g
- Orange1 large
- Fresh mint leaves1/4 cup, chopped
- Olive oil3 tbsp
- Orange juice2 tbsp
- Balsamic glaze1 tbsp
- Saltto taste
- Black pepperto taste

Preheat oven to 200°C (400°F). Wash and trim the raw beetroots. Wrap each beetroot individually in foil and roast for 45-60 minutes, or until tender when pierced with a fork.

Once cooled slightly, peel the roasted beetroots and cut into bite-sized cubes.

Peel the orange, removing all white pith. Segment the orange, cutting out the individual pieces, and then cut segments in half.

Crumble the feta cheese.

Chop the fresh mint leaves.

In a small bowl, whisk together olive oil, orange juice, balsamic glaze, salt, and pepper.

In a large bowl, combine the roasted beetroot cubes, orange segments, crumbled feta, and chopped mint.
