Preheat oven to 200°C (400°F).

Wash the hot peppers. Slice them lengthwise and carefully remove the seeds and membranes for less heat, or leave some in for more spice.

Place the halved peppers on a baking sheet lined with parchment paper.

Roast for 15-20 minutes, until the peppers are tender.

While peppers roast, mince the garlic and crumble the feta cheese. Chop the fresh herbs.

Once peppers are roasted, remove them from the oven. Carefully stuff each pepper half with a mixture of minced garlic, crumbled feta, and chopped herbs.
