- Tomatoes400g
- Tomato paste2 tbsp
- Garlic3 cloves
- Vegetable oil3 tbsp
- Water200ml
- Saltto taste
- Black pepperto taste

Trim and halve the fresh green beans.

Finely chop the onions and mince the garlic.

Dice the tomatoes.

Heat vegetable oil in a large pot or Dutch oven over medium heat. Sauté the chopped onions until softened and translucent, about 5-7 minutes.

Add the minced garlic and sauté for another minute until fragrant.

Stir in the tomato paste and cook for 1-2 minutes, stirring constantly.

Add the diced tomatoes, green beans, water, salt, and pepper to the pot.

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for at least 60-75 minutes, or until the green beans are tender and the stew has thickened.

Adjust seasoning if necessary.
