Peel, deseed, and finely grate the pumpkin.

In a bowl, combine grated pumpkin, flour, sugar, egg, yogurt, baking powder, and cinnamon. Mix well to form a thick batter.

Heat about 2-3 inches of vegetable oil in a deep pot or fryer to 180°C (350°F).

Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot.

Fry for 3-5 minutes per side, until golden brown and puffed.

Remove fritters with a slotted spoon and drain on paper towels.
