  • Onions2 medium
  • Garlic3 cloves
  • Walnuts100g
  • Pomegranate seeds1/2 cup
  • Cilantro1/2 bunch, chopped
  • Ground coriander1 tsp
  • Red pepper flakes1/4 tsp
  • Vegetable oil2 tbsp
  • Saltto taste
  • Black pepperto taste
  • Wateras needed

    Soak red beans in water overnight. Drain and rinse.

    Boil beans in fresh water until tender, about 1.5-2 hours. Drain, reserving some cooking liquid.

    Finely chop onions and sauté in vegetable oil until softened.

    Add minced garlic, ground coriander, and red pepper flakes to the onions. Cook for 1 minute.

    Grind walnuts into a fine meal using a food processor or mortar and pestle.

    In a pot, combine the cooked beans, sautéed onion mixture, ground walnuts, and chopped cilantro. Add enough reserved bean liquid or fresh water to create a thick stew consistency.

    Simmer for 20 minutes, stirring frequently to prevent sticking. Season with salt and black pepper to taste.

    Stir in most of the pomegranate seeds just before serving. Garnish with remaining pomegranate seeds and fresh cilantro.
