- Baby spinach300 g
- Short-grain white rice200 g
- Vegetable broth400 ml
- Olive oil2 tbsp
- Garlic2 cloves
- Lemon1/2
- Fresh parsley1/4 bunch
- Saltto taste
- Black pepperto taste

Mince the garlic. Chop the parsley.

Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant.

Add the short-grain rice to the skillet and stir for 1 minute.

Pour in the vegetable broth and the juice of half a lemon. Season with salt and pepper.

Bring to a boil, then reduce heat, cover, and simmer for 12-15 minutes, or until rice is cooked and liquid is absorbed.

Stir in the baby spinach, a handful at a time, until wilted. This should only take a couple of minutes.

Stir in the chopped parsley. Adjust seasoning.
