Rinse the Basmati rice thoroughly under cold water until the water runs clear. Drain well.

Clean and slice the mushrooms. Finely chop the shallots.

Melt 2 tbsp of butter in a medium saucepan over medium heat. Add the chopped shallots and sauté until softened, about 3-4 minutes.

Add the sliced mushrooms and cook until browned and tender, about 7-10 minutes. Stir in the smoked paprika and cook for 30 seconds until fragrant.

Add the rinsed Basmati rice to the saucepan and stir to coat with the mushroom mixture. Toast for 1-2 minutes.

Pour in the vegetable broth. Bring to a boil, then reduce heat to low, cover tightly, and simmer for 15-18 minutes, or until the liquid is absorbed and the rice is tender.

Remove from heat and let stand, covered, for 5 minutes. Fluff the pilaf with a fork. Stir in the remaining 1 tbsp of butter, chopped fresh thyme, salt, and black pepper to taste.
