- Apples (tart variety)500 g
- Granulated Sugar600 g
- Wateras needed
- Cinnamon Stick1
- Whole Cloves3-4
- Lemon Juice1 tbsp

Prepare the rosehips as in the traditional recipe (wash, halve, remove seeds).

Place rosehip shells and chopped apples in a pot. Cover with water and simmer for 30-40 minutes until very soft.

Strain the mixture through a sieve, pressing to extract as much liquid and pulp as possible. Discard solids.

Measure the liquid. For every 1 liter, add 750g of sugar. Add the cinnamon stick, cloves, and lemon juice.

Bring to a rolling boil over high heat, stirring until sugar dissolves.

Cook for 40-50 minutes, stirring frequently, until the marmalade reaches the setting point.

Remove the cinnamon stick and cloves.

Skim off any foam.

Ladle into sterilized jars and seal.

Allow to cool completely before storing.
