- Red bell pepper1 cup, diced
- Zucchini1 cup, diced
- Cherry tomatoes1 cup, halved

- Lemon zest1 teaspoon
- Dried oregano1 teaspoon
- Fresh parsley or mint1/4 cup, chopped (for garnish)

Rinse the basmati rice thoroughly under cold water until the water runs clear. Drain well.

Heat olive oil in a large saucepan or Dutch oven over medium heat. Add the finely chopped onion and sauté until softened, about 5 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Add the diced red bell pepper and zucchini to the pot. Cook for 5-7 minutes until slightly tender.

Stir in the rinsed basmati rice, dried oregano, salt, and pepper. Toast the rice for 1-2 minutes, stirring constantly.

Pour in the vegetable broth and add the lemon zest. Bring to a boil.

Reduce heat to low, add the halved cherry tomatoes, cover, and simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed.
