- Boiling water1.5 cups
- Tomatoes2 medium, finely chopped
- Cucumber1 medium, finely chopped
- Green bell pepper1/2, finely chopped
- Red onion1/4, finely chopped
- Fresh parsley1/2 cup, chopped
- Fresh mint1/4 cup, chopped
- Olive oil1/4 cup
- Lemon juice2 tablespoons

Place the fine bulgur in a heatproof bowl. Pour the boiling water over it, stir, cover, and let it sit for 15-20 minutes, or until the water is absorbed and the bulgur is tender.

Fluff the bulgur with a fork to separate the grains.

Add the chopped tomatoes, cucumber, green bell pepper, red onion, parsley, and mint to the bowl with the bulgur.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

Pour the dressing over the bulgur and vegetable mixture. Toss gently to combine all ingredients.
