
Traditional Ashure (Noah's Pudding)

- Dried white beans1/2 cup
- Wheat berries1 cup
- Rice1/2 cup
- Dried apricots1/2 cup
- Raisins1/2 cup
- Dried figs1/4 cup
- Dried dates1/4 cup
- Sugar1.5 cups
- Rose water2 tablespoons
- Orange blossom water1 tablespoon
- Lemon juice1 tablespoon
- Walnuts1/2 cup
- Pistachios1/4 cup
- Pomegranate seedsfor garnish
- Cinnamonfor garnish

Soak chickpeas and white beans overnight separately. Drain and cook until tender. Cook wheat berries until tender.

Rinse wheat berries and rice. Combine wheat berries, rice, cooked chickpeas, and cooked white beans in a large pot. Add enough water to cover generously.

Bring to a boil, then reduce heat and simmer for about 1 hour, stirring occasionally, until grains are very soft and mixture has thickened. Add more water if it becomes too dry.

Chop dried apricots, figs, and dates. Add them to the pot along with raisins, sugar, rose water, orange blossom water, and lemon juice. Stir well.

Continue to simmer for another 30 minutes, stirring frequently, until the pudding reaches a thick, porridge-like consistency. Adjust sugar to taste.

Remove from heat. Stir in half of the chopped walnuts and pistachios.

Ladle the ashure into individual serving bowls. Garnish with the remaining walnuts, pistachios, pomegranate seeds, and a sprinkle of cinnamon.
