- Red Bell Pepper1 large
- Tomatoes2 medium or 1 cup cherry tomatoes
- Vegetable Oil4 tbsp
- Paprika1 tsp
- Dried Mint1 tsp
- Savory (Chubritsa)1 tsp
- Saltto taste
- Black Pepperto taste
- Water100 ml

Preheat oven to 200°C (400°F).

Wash and cut potatoes into large wedges or cubes. Chop onions, bell pepper, and tomatoes into similar-sized pieces.

In a large bowl, combine potatoes, onions, bell pepper, and tomatoes.

Add vegetable oil, paprika, dried mint, savory, salt, and black pepper. Toss well to coat everything evenly.

Transfer the mixture to a baking dish or a large oven-safe pan. Add water.

Cover the dish with foil and bake for 40 minutes.

Remove the foil and bake for another 15-20 minutes, or until the potatoes are tender and golden brown.
