
Traditional Baked Vegetables with Sirene Cheese

- Sirene cheese (Bulgarian white brine cheese)200g
- Olive oil4 tbsp

- Water1/4 cup
- Fresh parsleyfor garnish

Preheat oven to 200°C (400°F).

Wash and chop all vegetables (bell peppers, zucchini, tomatoes, onion, potatoes) into roughly 2-3 cm chunks. Keep potatoes slightly smaller to ensure even cooking.

In a large bowl, toss the chopped vegetables with olive oil, salt, and black pepper.

Spread the seasoned vegetables in an even layer in a baking dish (preferably clay or ceramic).

Add the water to the baking dish.

Cover the baking dish with foil or a lid.

Bake for 30-40 minutes, or until the vegetables are tender.

Remove the foil/lid. Crumble the sirene cheese over the top of the vegetables.

Return to the oven uncovered for another 10-15 minutes, until the cheese is softened and slightly golden.
