A traditional Bulgarian baked macaroni dish featuring pasta layered with a rich meat sauce and topped with a creamy béchamel and cheese, then baked until golden brown and bubbly.

- Ground pork or beef500g
- Onion1 large
- Garlic3 cloves
- Tomato paste2 tbsp
- Crushed tomatoes400g can
- Butter100g
- All-purpose flour100g
- Milk1 liter
- Eggs2
- Kashkaval or yellow cheese200g
- Olive oil3 tbsp

Cook macaroni according to package directions until al dente. Drain and set aside.

In a large pan, heat olive oil and sauté chopped onion until softened. Add minced garlic and cook for 1 minute more.

Add ground meat to the pan and cook, breaking it up, until browned. Drain excess fat.

Stir in tomato paste and cook for 1 minute. Add crushed tomatoes, salt, and pepper. Simmer for 15-20 minutes until sauce thickens.

Prepare the béchamel sauce: Melt butter in a saucepan. Whisk in flour and cook for 1-2 minutes to form a roux.

Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until the sauce thickens. Season with salt and pepper.

Remove from heat and whisk in the eggs one by one. Stir in half of the grated cheese.

In a greased baking dish, layer half of the cooked macaroni, followed by the meat sauce, and then the remaining macaroni.

Pour the béchamel sauce evenly over the top. Sprinkle with the remaining grated cheese.

Bake in a preheated oven at 180°C (350°F) for 30-40 minutes, or until the top is golden brown and bubbly.
