- Chicken broth100ml

Cook penne pasta according to package directions. Reserve pasta water.

Slice chicken breast. Slice mushrooms and mince garlic. Chop sun-dried tomatoes.

Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken.

Add mushrooms to the skillet and cook until tender. Add minced garlic and chopped sun-dried tomatoes, cook for 1 minute.

Pour in chicken broth and heavy cream. Bring to a simmer, then stir in Parmesan cheese until sauce thickens.

Add fresh spinach and stir until wilted. Return chicken to the skillet.

Add drained penne pasta to the sauce. Toss to combine, adding pasta water if needed to reach desired consistency.
