Cut chicken thighs into 1.5-inch cubes. Mince garlic. In a bowl, combine olive oil, lemon juice, minced garlic, smoked paprika, chili flakes, cumin, oregano, salt, and pepper. Add chicken cubes and marinate for at least 1 hour (or up to 4 hours).

Prepare tzatziki: Grate cucumber and squeeze out excess water. Mix with Greek yogurt, chopped dill, a minced garlic clove (optional), salt, and pepper.

Thread marinated chicken onto skewers. If using wooden skewers, soak them in water for 30 minutes prior to use.

Grill the chicken skewers over medium-high heat for about 10-15 minutes, turning occasionally, until cooked through and slightly charred.
