- Smoked paprika1 teaspoon
- Cumin1/2 teaspoon
- Diced tomatoes1 can (15 oz)

Heat olive oil in a skillet over medium-high heat. Add onion and cook until softened, about 3 minutes.

Add minced garlic, smoked paprika, and cumin. Cook for 30 seconds until fragrant.

Stir in the diced tomatoes. Season with salt and pepper. Bring to a simmer and cook for 5 minutes.

Create small wells in the sauce and carefully crack the eggs into them. Reduce heat to medium-low, cover, and cook for 4-6 minutes, until eggs are cooked to your liking.
