- Onion1 medium, chopped
- Red bell pepper1/2, chopped
- Garlic3 cloves, minced
- Cumin1 teaspoon
- Coriander1/2 teaspoon
- Sweet paprika1 teaspoon
- Crushed tomatoes1 can (28 oz)
- Kalamata olives1/2 cup, pitted and halved
- Feta cheese1/2 cup, crumbled
- Saltto taste
- Black pepperto taste
- Eggs3-4
- Fresh oregano or parsleyfor garnish

Heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook until softened, about 7 minutes.

Add garlic, cumin, coriander, and paprika. Cook for 1 minute until fragrant.

Stir in the crushed tomatoes and Kalamata olives. Season with salt and pepper. Bring to a simmer and cook for 10 minutes.

Stir in half of the crumbled feta cheese. Make wells in the sauce and crack the eggs into them. Sprinkle the remaining feta over the sauce.

Cover and cook for 5-8 minutes, until eggs are set to your preference. Garnish with fresh oregano or parsley. Serve hot.
