- Dried flat rice noodles200g
- Cooked chicken, shredded or diced150g
- Eggs, lightly beaten2
- Garlic, minced1 clove
- Bean sprouts1 cup
- Scallions, chopped2
- Roasted peanuts, crushed3 tbsp
- Lime wedges4
- Ready-made Pad Thai sauce1/2 cup
- Vegetable oil2 tbsp
- Saltto taste
- Black pepperto taste

Soak rice noodles in hot water until softened, then drain.

Heat oil in a wok or large skillet over medium-high heat. Add garlic and stir-fry briefly.

Add the drained noodles and Pad Thai sauce. Toss to coat.

Push noodles to one side. Pour eggs into the empty side and scramble. Mix with noodles.

Add cooked chicken, bean sprouts, and scallions. Stir-fry for 1-2 minutes until heated through and sprouts are tender-crisp.

Season with salt and pepper if needed. Add a splash of water if too dry.

Serve immediately, garnished with crushed peanuts and lime wedges.
