- Frozen chopped spinach, thawed and squeezed dry400g
- Sirene cheese (Bulgarian white brine cheese)250g
- Eggs2 large
- Melted butter75g
- Salt1/4 teaspoon
- Black pepper1/8 teaspoon

Preheat oven to 190°C (375°F). Line a baking sheet with parchment paper.

In a bowl, combine the thawed and squeezed dry spinach, crumbled sirene cheese, eggs, salt, and pepper. Mix well.

Unroll the filo dough. Keep it covered with a damp cloth.

Lay one sheet of filo dough flat. Brush lightly with melted butter.

Spread a thin layer of the spinach and cheese mixture along one long edge of the filo sheet.

Carefully roll the filo dough up tightly, starting from the edge with the filling, to form a log.

Place the roll seam-side down on the prepared baking sheet. Brush the top with melted butter.

Repeat with the remaining filo sheets and filling to create more rolls.

Bake for 20-25 minutes, or until the rolls are golden brown and crispy.
