A traditional Russian honey cake with multiple thin, fragrant honey-infused layers, generously coated with a rich sour cream or condensed milk frosting. It's known for its soft, moist texture and deep caramel-honey flavor.

Melt butter, sugar, and honey in a double boiler or heavy-bottomed saucepan over medium heat, stirring until smooth. Do not boil.

Remove from heat. Stir in baking soda; the mixture will foam up.

Let cool slightly, then whisk in eggs one at a time until fully incorporated.

Gradually add flour and salt, mixing until a soft dough forms. It will be sticky.

Divide the dough into 8-10 equal portions. Wrap each portion and chill for at least 1 hour.

Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

On a lightly floured surface, roll out each portion of dough very thinly into circles (about 8-9 inches in diameter). Trim edges if desired before or after baking.

Bake each layer for 5-7 minutes, or until golden brown. They bake quickly, so watch carefully.

While layers cool, prepare the frosting: Beat sour cream with powdered sugar until smooth and thick.

Assemble the cake: Spread a generous layer of frosting between each cake layer, including the top and sides. Use the trimmed scraps, finely crumbled, to decorate the sides and top.

Chill the cake for at least 8 hours, or preferably overnight, to allow the layers to soften and flavors to meld.
