
Spiced Honey Gingerbread (Medovyi Pryanik - Hard Dough)

A traditional hard gingerbread, often shaped into intricate designs or figures. It uses a cooked honey dough that results in a firm, crisp texture, perfect for decorating and long storage. Flavored with honey and spices.

- Honey1.5 cups
- Sugar1 cup
- Butter1/2 cup
- Eggs2 large
- Baking soda1 tsp
- Ground cinnamon2 tsp

- Salt1/4 tsp

In a large saucepan, combine honey, sugar, and butter. Heat over medium heat, stirring constantly, until the sugar and butter are dissolved and the mixture is smooth. Do not boil.

Remove from heat and let cool until lukewarm. Stir in the spices and salt.

In a separate bowl, whisk the eggs lightly, then gradually whisk them into the honey mixture.

Gradually add the flour and baking soda, mixing until a stiff dough forms. It will be quite firm.

Wrap the dough tightly and chill for at least 2-3 hours, or preferably overnight.

Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

On a lightly floured surface, roll out the dough thinly (about 1/8 to 1/4 inch thick). Cut into desired shapes using cookie cutters.

Place shapes on the prepared baking sheets. If desired, make small holes for hanging.

Bake for 8-12 minutes, depending on thickness, until the edges are firm and lightly browned. They will not spread much.

Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely. These are meant to be crisp.
