- Ginger1 inch piece, sliced
- Garlic3 cloves, smashed
- Soy sauce2 tablespoons
- Rice vinegar1 tablespoon
- Sesame oil1 teaspoon
- Cornstarch1 tablespoon
- Chili oilto taste
- Green onions, slicedfor garnish
- Saltto taste
- Black pepperto taste

Clean the pork tripe thoroughly. Blanch in boiling water for 10 minutes, then rinse.

In a large pot, combine the pork tripe, water, ginger, and smashed garlic. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until tender.

Remove the tripe and slice it into bite-sized pieces. Strain the broth and return it to the pot.

Stir in soy sauce, rice vinegar, and sesame oil into the broth. Bring back to a simmer.

Return the sliced tripe to the pot. If a thicker broth is desired, mix cornstarch with a little cold water and stir into the soup until thickened.
