- Vegetable broth1 liter
- Heavy cream150ml
- Olive oil2 tbsp
- Chivesfor garnish

Mince the garlic. Heat olive oil in a pot over medium-high heat. Add the pre-sliced mushrooms and cook until browned, about 7-10 minutes.

Add the minced garlic and cook for 1 minute until fragrant.

Pour in the vegetable broth and bring to a simmer. Cook for 10 minutes.

Reduce heat to low. Stir in the heavy cream. Heat through gently, do not boil.

Season with salt and black pepper to taste. If the soup is too thick, add a little water.

Serve hot, garnished with chopped chives.
