- Potatoes600g, peeled
- Chicken or vegetable broth1 liter
- Heavy cream100ml
- Butter2 tbsp
- Saltto taste
- Black pepperto taste
- Wateras needed
- Chives (optional)for garnish

Cut the peeled potatoes into roughly equal chunks.

Place potatoes in a pot and cover with broth and enough water to submerge. Bring to a boil.

Cook for 15-20 minutes, or until potatoes are very tender.

Carefully transfer the cooked potatoes and about half of the liquid to a blender (or use an immersion blender in the pot). Blend until smooth.

Return the pureed mixture to the pot. Stir in the heavy cream and butter.

Heat gently until the butter is melted and the soup is heated through. Do not boil.

Season with salt and black pepper to taste.
