- Fresh nettle leaves400g
- Potatoes2 medium
- Leek1 large (white and light green parts)
- Garlic2 cloves
- Chicken broth1 liter
- Heavy cream150ml
- Smoked bacon100g, diced
- Olive oil1 tbsp
- Saltto taste
- Black pepperto taste
- Fresh chivesfor garnish

Wash nettle leaves and blanch in boiling water for 1 minute. Drain and rinse with cold water. Squeeze out excess water and chop.

Peel and dice potatoes. Slice leek thinly. Mince garlic.

In a large pot, heat olive oil over medium heat. Add diced bacon and cook until crispy. Remove bacon with a slotted spoon and set aside, leaving rendered fat in the pot.

Add leeks to the pot and sauté until softened, about 5-7 minutes.

Add garlic and cook for 1 minute until fragrant.

Add diced potatoes and chicken broth. Bring to a boil, then simmer until potatoes are tender, about 15-20 minutes.

Add the chopped nettles and cook for 5 minutes.

Blend the soup until very smooth using an immersion blender or a regular blender.

Stir in heavy cream. Season with salt and black pepper. Heat gently.

Ladle soup into bowls, top with crispy bacon bits, chopped chives, and a drizzle of cream.
