- Vegetable broth800ml
- Coconut milk (full fat)200ml
- Olive oil1 tbsp
- Curry powder1 tsp
- Red chili flakes1/4 tsp (or to taste)

Rinse the red lentils thoroughly.

Heat olive oil in a pot over medium heat. Sauté onion until softened, about 3-4 minutes.
