Slice eggplants, brush with olive oil, and grill or bake until tender. Set aside.

Sauté chopped onion and minced garlic in olive oil. Add ground beef and cook until browned. Drain excess fat.

Stir in canned tomatoes, salt, and pepper. Simmer for 15 minutes.

Prepare béchamel: Melt butter in a saucepan, whisk in flour to form a roux. Gradually whisk in milk until smooth. Cook until thickened. Season with salt, pepper, and nutmeg.

Layer the grilled eggplant slices in a baking dish, top with the meat sauce, and then pour the béchamel sauce over everything.

Bake in a preheated oven at 190°C (375°F) for 30-40 minutes, until the top is golden and bubbly.
