- Ground lamb or beef500g
- Rice3/4 cup
- Onions2 medium
- Garlic cloves3
- Crushed tomatoes400g
- Roasted red peppers, chopped1/2 cup

- Smoked paprika1.5 tsp
- Red pepper flakes1/2 tsp (or to taste)
- Fresh parsley, chopped1/4 cup

Prepare the bell peppers by removing tops and seeds. Blanch them in boiling water for 2-3 minutes to soften.

Finely chop one onion and mince garlic. Sauté in 2 tbsp olive oil until softened. Add ground meat and cook until browned. Drain fat.

Rinse rice. Add to meat mixture along with chopped parsley, smoked paprika, red pepper flakes, salt, and pepper. Stir well.

Stuff the blanched peppers with the spicy meat and rice mixture.

In a blender or food processor, combine crushed tomatoes, chopped roasted red peppers, remaining 1 tbsp olive oil, salt, and pepper. Blend until smooth.

Place stuffed peppers in a baking dish. Pour the blended sauce around them. Add water if needed to reach halfway up the peppers.

Cover with foil and bake at 180°C (350°F) for 50-60 minutes, or until peppers are tender and filling is cooked.

Remove foil for the last 10 minutes. Garnish with fresh parsley and chili slices before serving.
