- Bell pepper1 (any color)
- Onion1 medium
- Garlic3 cloves
- Diced tomatoes400g
- Vegetable broth1 liter
- Cannellini beans400g can, drained and rinsed
- Ricotta cheese150g
- Dried basil1 tsp
- Dried oregano1 tsp
- Saltto taste
- Black pepperto taste
- Olive oil2 tbsp

Heat olive oil in a large pot over medium heat. Add chopped onion, bell pepper, and zucchini. Cook until softened, about 7-10 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Stir in diced tomatoes, vegetable broth, cannellini beans, basil, and oregano. Bring to a simmer.

Break lasagna noodles into pieces and add them to the soup. Cook until al dente, about 10-12 minutes.
