  • Onion1 medium
  • Garlic3 cloves
  • Diced tomatoes400g
  • Vegetable broth1 liter
  • Cannellini beans400g can, drained and rinsed
  • Ricotta cheese150g
  • Dried basil1 tsp
  • Dried oregano1 tsp
  • Saltto taste
  • Black pepperto taste
  • Olive oil2 tbsp

    Heat olive oil in a large pot over medium heat. Add chopped onion, bell pepper, and zucchini. Cook until softened, about 7-10 minutes.
