- Smoked paprika1 tsp
- Red pepper flakes1/2 tsp (or to taste)
- Fresh mintsmall bunch

Preheat oven to 190°C (375°F).

Chop zucchini, bell peppers, tomatoes, and red onion into large chunks. Mince garlic and finely chop hot peppers (remove seeds for less heat).

In a large bowl, combine chopped vegetables, minced garlic, chopped hot peppers, olive oil, smoked paprika, red pepper flakes, salt, and black pepper. Mix well.

Transfer the mixture to a baking dish. Crumble feta cheese over the top.

Add water to the bottom of the dish.

Bake for 45-55 minutes, or until vegetables are tender and feta is softened and slightly golden.
