Dice the tomatoes and bell pepper (if using) into small cubes.

Crumble the sirene cheese.

Heat butter or oil in a non-stick skillet over medium heat. Add diced tomatoes and bell pepper, and sauté for 3-5 minutes until softened.

Whisk the eggs in a bowl with salt and pepper.

Pour the whisked eggs over the vegetables in the skillet. Cook, stirring gently, until the eggs are almost set.

Add the crumbled sirene cheese to the skillet and gently fold it into the eggs. Cook for another 1-2 minutes until the cheese is slightly melted and the eggs are fully cooked but still moist.
