A simple and healthy take on traditional pancakes, boosted with protein for a more filling breakfast or post-workout meal. These are fluffy and satisfying.

- Protein powder (whey or plant-based)2 scoops
- Oats (rolled or quick)1/2 cup
- Eggs2 large
- Milk (dairy or non-dairy)1/2 cup
- Baking powder1 tsp
- Salt1/4 tsp
- Cinnamon (optional)1/2 tsp
- Coconut oil or butter (for cooking)1 tbsp

In a blender or food processor, combine protein powder, oats, eggs, milk, baking powder, salt, and cinnamon (if using). Blend until smooth.

If the batter is too thick, add a little more milk until it reaches your desired consistency.

Heat a lightly oiled griddle or frying pan over medium heat.

Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.

Cook for about 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles appear on the surface.
