- Smoked bacon150 g
- Onion1 large

- Sweet paprika2 tbsp
- Hot paprika (optional)1 tsp
- Olive oil30 ml
- Chicken broth150 ml
- Saltto taste
- Black pepperto taste
- Fresh parsley or dillfor garnish

Preheat oven to 190°C (375°F).

Cut potatoes into cubes. Dice the bacon and chop the onion and garlic.

In a skillet, cook the diced bacon until crispy. Remove bacon bits and set aside, leaving the rendered fat in the skillet.

Add olive oil to the skillet if needed. Add chicken thighs and brown them on all sides in the bacon fat. Remove chicken and set aside.

Add chopped onion to the skillet and sauté until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.

Stir in sweet paprika and hot paprika (if using). Cook for 30 seconds, stirring constantly.

Return the chicken to the skillet. Add the potato cubes and chicken broth. Season with salt and pepper.

Bring to a simmer, then cover the skillet (or transfer to a baking dish and cover with foil).

Bake for 40 minutes.

Uncover, sprinkle the reserved crispy bacon bits over the top, and bake for another 15-20 minutes, or until chicken is cooked through and potatoes are tender.
