Soak wooden skewers in water for at least 30 minutes to prevent burning.

Cut chicken breast into 1-inch cubes. Clean and trim mushroom stems.

In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper to make the marinade.

Add chicken cubes and mushrooms to the marinade. Toss to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 2 hours).

Thread marinated chicken and mushrooms alternately onto the soaked skewers.
