Classic Roasted Whole Chicken

A traditional Bulgarian method for roasting a whole chicken, seasoned simply to highlight the natural flavors of the poultry, often served with roasted potatoes or vegetables.

  • Saltto taste
  • Black pepperto taste
  • Butter50 g
  • Garlic3 cloves
  • Rosemary2 sprigs
  • Thyme2 sprigs
  • Lemon1/2
  • Potatoes500 g

    Preheat oven to 200°C (400°F).

    Rinse the chicken inside and out and pat dry with paper towels.

    Season the chicken generously with salt and black pepper, both inside and out.

    Stuff the cavity with rosemary, thyme, garlic cloves, and lemon half.

    Rub the chicken skin with softened butter.

    Place the chicken in a roasting pan. Add peeled and quartered potatoes around the chicken.

    Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the juices run clear when pierced with a fork. Baste occasionally with pan juices.

    Let the chicken rest for 10-15 minutes before carving.
