- Fresh Parsley1 cup, packed
- Fresh Cilantro1/2 cup, packed
- Garlic4 cloves
- Red Wine Vinegar1/4 cup
- Olive Oil1/2 cup
- Red Pepper Flakes1/2 tsp
- Saltto taste
- Black Pepperto taste

Prepare the chimichurri: Finely chop the parsley, cilantro, and garlic. In a bowl, combine the chopped herbs and garlic with red wine vinegar, olive oil, red pepper flakes, salt, and pepper. Stir well and let sit for at least 15 minutes for flavors to meld.

Pat the sirloin steaks dry and season generously with salt and pepper.

Preheat a grill or grill pan to medium-high heat. Grill the steaks for 4-5 minutes per side for medium-rare, or to your desired doneness.
