  • Vegetable Oil2 tbsp
  • Cooked Mexican Rice2 cups
  • Pinto Beans1.5 cups, cooked or canned
  • Large Flour Tortillas4
  • Pico de Gallo1 cup

    In a bowl, whisk together lime juice, orange juice, minced garlic, cumin, chopped cilantro, salt, and pepper. Add the skirt steak and marinate for at least 30 minutes (or up to 4 hours in the refrigerator).

    Heat vegetable oil in a grill pan or outdoor grill to medium-high heat.

    Remove steak from marinade, letting excess drip off. Grill for 3-5 minutes per side for medium-rare, or until desired doneness. Let rest for 10 minutes before thinly slicing against the grain.
