Ingredients
- Green Lentils1 cup

- Celery Stalks2
- Yellow Onion1 large

- Vegetable Broth6 cups
- Olive Oil2 tablespoons
- Thyme Sprigs3
- Bay Leaf1
- Saltto taste

Rinse the green lentils thoroughly under cold water.

Dice the carrots, celery, and onion into small, uniform pieces (mirepoix). Mince the garlic.

Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced carrots, celery, and onion. Sauté until softened, about 8-10 minutes.

Add the minced garlic and cook for another minute until fragrant.

Stir in the rinsed lentils, vegetable broth, thyme sprigs, and bay leaf.

Bring the soup to a boil, then reduce heat to low, cover, and simmer for 40-50 minutes, or until lentils are tender.

Remove the thyme sprigs and bay leaf. Season with salt and black pepper to taste.
