- Onion1/2 medium
- Cooking oil1 tbsp
- Salt1 tsp
- Black pepper1/2 tsp
- Water3 cups
- Vegetable broth1 cup

Wash and chop the zucchini, squash, and onion into rough chunks.

Heat the cooking oil in a pot or saucepan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the chopped zucchini and squash to the pot. Stir and cook for another 5 minutes.

Pour in the water and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the vegetables are very tender.

Carefully transfer the soup to a blender (or use an immersion blender directly in the pot). Blend until smooth. Work in batches if necessary, and be cautious with hot liquids.
