- Sourdough bread2 slices
- Gruyere cheese2-3 slices
- Yellow onion1/2 medium
- Butter2 tablespoons
- Olive oil1 teaspoon

Thinly slice the yellow onion. Heat 1 tablespoon of butter and 1 teaspoon of olive oil in a skillet over medium-low heat.

Add the sliced onions, a pinch of salt, and cook slowly, stirring occasionally, for 15-20 minutes until deeply caramelized and sweet. Set aside.

Butter one side of each slice of sourdough bread.

Place one slice of bread, butter-side down, in a clean skillet over medium heat.

Layer the Gruyere cheese slices on top of the bread.

Spoon the caramelized onions evenly over the cheese.

Place the second slice of bread on top, butter-side up.

Grill for 4-5 minutes, until the bottom is golden brown and the cheese is melting.

Carefully flip the sandwich and grill the other side for another 4-5 minutes, until golden brown and the cheese is fully melted.
