Ingredients
- Yukon Gold potatoes2 lbs
- Garlic1 head
- Unsalted butter6 tbsp
- Half-and-half1/2 cup
- Fresh rosemary1 tbsp, chopped
- Fresh parsley2 tbsp, chopped
- Saltto taste
- Black pepperto taste

Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with 1 tbsp olive oil (not provided, assume user has it or omit), wrap in foil, and roast for 30-40 minutes until soft.

While garlic roasts, peel and quarter the Yukon Gold potatoes. Place in a pot, cover with cold water, add salt, and bring to a boil. Cook until tender, about 15-20 minutes.

Drain potatoes well. Squeeze the roasted garlic cloves out of their skins into the pot with the hot potatoes.

Warm the half-and-half and 5 tbsp butter in a saucepan.

Mash the potatoes and roasted garlic together until smooth. Gradually incorporate the warm half-and-half and butter mixture. Stir in chopped rosemary and parsley.
