- Yellow onions2 large
- All-purpose flour1 cup
- Yellow cornmeal1 cup
- Cayenne pepper1 teaspoon
- Paprika2 teaspoons
- Garlic powder1 teaspoon
- Onion powder1 teaspoon
- Salt1.5 teaspoons
- Black pepper1 teaspoon
- Eggs2 large
- Milk0.5 cup
- Vegetable oil for frying4 cups

Slice onions into 1/2-inch thick rings and separate.

In a shallow dish, combine flour, cornmeal, cayenne pepper, paprika, garlic powder, onion powder, salt, and black pepper.

In a separate bowl, whisk together eggs and milk.

Heat vegetable oil in a deep pot to 375°F (190°C).

Dip each onion ring first into the egg-milk mixture, then dredge thoroughly in the seasoned cornmeal mixture, pressing to adhere.

Carefully fry battered onion rings in batches for 4-6 minutes, turning occasionally, until deep golden brown and very crispy.
