
Classic Moong Dal Khichdi

Ingredients
- Basmati rice1 cup
- Split yellow moong dal1 cup
- Ghee2 tbsp
- Cumin seeds1 tsp
- Turmeric powder1/2 tsp
- Asafoetida (hing)1/4 tsp
- Ginger, grated1 tsp
- Green chili, slit1
- Saltto taste
- Water4-5 cups
- Fresh cilantro, choppedfor garnish

Rinse rice and moong dal thoroughly under cold water until the water runs clear. Drain well.

In a pressure cooker or heavy-bottomed pot, heat ghee over medium heat.

Add cumin seeds and let them splutter.

Add asafoetida and grated ginger. Sauté for a few seconds until fragrant.

Add the rinsed rice and dal mixture to the pot. Stir for a minute.

Add turmeric powder and salt. Mix well.

Pour in water. Stir to combine.

If using a pressure cooker, close the lid and cook for 3-4 whistles on medium heat. Let the pressure release naturally.

If using a pot, bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, stirring occasionally, until rice and dal are cooked and soft.

Adjust consistency with more hot water if needed. The khichdi should be soft and porridge-like.

Serve hot, garnished with fresh cilantro and an extra dollop of ghee if desired.
