Prepare the pie crust: In a large bowl, combine flour and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough just comes together. Divide dough in half, flatten into discs, wrap, and chill for at least 30 minutes.

Prepare the apple filling: In a large bowl, toss sliced apples with sugar, cinnamon, nutmeg, and lemon juice.

Assemble the pie: Roll out one disc of dough and line a 9-inch pie plate. Pour the apple filling into the crust. Roll out the second disc of dough and place it over the filling, crimping the edges to seal. Cut vents in the top crust or create a lattice.

Brush the top crust with beaten egg wash.

Bake in a preheated oven at 400°F (200°C) for 20 minutes. Reduce heat to 375°F (190°C) and bake for another 30-40 minutes, or until the crust is golden brown and the filling is bubbly.
