  • Barley rusks (Paximadia)4-6 large
  • Ripe tomatoes3 large
  • Feta cheese150g, crumbled
  • Capers2 tbsp
  • Extra virgin olive oil1/4 cup
  • Waterfor soaking
  • Dried oregano1 tsp
  • Saltto taste
  • Black pepperto taste

Steps

    Lightly dampen the barley rusks with water. They should be softened but not mushy. Arrange them on a serving platter.

    Grate the ripe tomatoes using the large holes of a grater, discarding the skins. Season the grated tomato with salt and pepper.

    Spoon the grated tomato mixture evenly over the softened rusks.

    Crumble the feta cheese over the tomatoes.

    Sprinkle the capers over the salad.

    Drizzle generously with extra virgin olive oil.
