Ingredients
- Romaine lettuce1/2 head
- Mixed greens2 cups
- Tomatoes1 large, chopped
- Cucumber1/2, chopped
- Radishes3, thinly sliced
- Red onion1/4, thinly sliced
- Fresh mint leaves2 tablespoons, chopped
- Fresh parsley leaves2 tablespoons, chopped
- Pita bread1/2, cut into pieces
- Halloumi cheese8 oz, cubed
- Olive oil1/4 cup + 2 tablespoons
- Lemon juice2 tablespoons
- Sumac1 tablespoon
- Saltto taste
- Black pepperto taste

Preheat oven to 375°F (190°C). Toss pita pieces with 1 tablespoon of olive oil and bake until golden and crisp. Set aside.

Prepare the vegetables: chop romaine lettuce, mixed greens, tomatoes, cucumber, radishes, and red onion. Chop mint and parsley.

In a large bowl, combine the prepared vegetables and herbs.

In a small bowl, whisk together 1/4 cup olive oil, lemon juice, sumac, salt, and pepper for the dressing.

Heat a grill pan or skillet over medium-high heat. Add the cubed halloumi and grill for 2-3 minutes per side, until golden brown and slightly softened. Alternatively, pan-fry the halloumi.

Pour the dressing over the salad ingredients and toss gently.

Add the grilled halloumi cubes and toasted pita pieces to the salad. Toss lightly one last time.
